Summer Cocktails & Mocktails 🍹

The hottest days of Summer are quickly approaching. No matter where you are, a refreshing, yummy drink on a hot day can make anywhere feel like a tropical vacation! Here are some of our favorite concoctions (both alcoholic and non-alcoholic) to sip on the beach!

1. Sparkling Coconut Yuzu Mezcal Cocktail

The flavors of coconut and yuzu are guaranteed to take your tastebuds on a trip to the tropics!

*For this cocktail combine 2 ounces of yuzu juice, 2 ounces of simple syrup, 4 ounces of coconut water, and 3 ounces of mezcal and shake together. Pour into two glasses, and add 2 ounces of club soda to each glass and garnish with a twist of lemon! To make the drink non-alcoholic, leave the mezcal out!

2. Hawaiian Mimosas

Mimosas are always a favorite for brunch with the girls… why not switch it up a bit and give this brunch classic some island vibes with this recipe?

*For each champagne flute combine 1 ounce coconut rum and 2 ounces pineapple juice, then top with sparkling wine! Garnish with some maraschino cherries and pineapple slices.

3. Kona Coffee-tini

If you spend summer months sipping on iced coffee to cool down, this drink is for you. Kona coffee is grown in Hawai’i and is known for being highly aromatic without being too bitter-- a favorite among coffee lovers!

*Combine 2 ounces of chilled Kona coffee, 1 ounce of coffee liqueur, 1 ounce of caramel syrup, and 4 ounces of vanilla vodka. Pour into two glasses over ice and garnish with a drizzle of caramel syrup and chocolate-covered coffee beans!

4. Passionfruit Mojito

Mojitos are a super refreshing drink to sip on while basking in the sun, so why not give them a tropical twist with tangy passionfruit?

*To make this cocktail for two, you’ll need 4 passionfruit, ⅛ cup mint leaves, 2 ½ tablespoons of white sugar, 3 tablespoons of lime juice, club soda, and 3 ounces of light rum.

Cut open the passionfruit and remove the juice and pulp from the inside. If you want, you can strain out the seeds, but passion fruit seeds are actually edible so it’s totally fine to leave them in! Muddle the mint and sugar together in a cocktail shaker. Shake the mint mixture with rum, ice, and lime juice. Split the mixture into glasses with ice, and add passionfruit pulp and a splash of club soda to each glass. Garnish with extra mint leaves! For a non-alcoholic version, replace the club soda and rum with lemon-lime soda.

5. Classic Pina Colada

Sometimes, the classics are just the best-- and the tried-and-true Pina Colada is a classic that always hits the spot. Even better, it’s really easy to make for a hot day when you just want to lay in the sun!

*Combine 3 cups of frozen pineapple, ⅔ cup coconut milk, and 4 ounces of rum in a blender and blend. Divide into two glasses, and garnish with pineapple slices, cute paper umbrellas, and maraschino cherries! This recipe is also easily non-alcoholic: just replace the rum with some pineapple juice!
